Caprese skewers are simple to make! These skewers are based on the recipe for insalata Caprese but served as a smaller version as Caprese kabobs. So let’s start!

You will need the following to prepare the skewers:

-A small bowl,

-Measuring spoons (1/4 teaspoon, teaspoon, tablespoon),

-Spoon,

-4 skewers (8 inches long), and

-Large Serving plate (about 10 inches wide/long).

Ingredients

12 Mini Bocconcini Balls

12 Grape Tomatoes

12 Medium Fresh Basil Leaves

2 teaspoons Extra Virgin Olive Oil

1/4 teaspoon Sea Salt

1/4 teaspoon Finely Ground Black Pepper

1 tablespoon Balsamic Glaze

Instructions

  1.  First drain out 12 mini Bocconcini and place in the small bowl.
  2. Next wash 12 grape tomatoes and add to the same bowl.
  3. Then add the Extra Virgin Olive Oil to the bowl.
  4. Now sprinkle the sea salt and black pepper.
  5. Using a spoon, mix together the ingredients.
  6. Now for the assembly….Take one of the mini Bocconcini balls and insert the skewer until the cheese is at the bottom.
  7. Next take one of the fresh basil leaves, fold it in half and insert the skewer through the middle of the folded basil leaf.
  8. Now take one of the grape tomatoes and insert on the skewer until it reaches the basil leaf.
  9. Next repeat this same step for a second set on the same skewer.
  10. Lastly, for the finishing touch, drizzle with some balsamic glaze.
