This simple Chickpea Salad recipe is easy to prepare and ready in a few minutes! With only 5 main ingredients, this will be your go to chickpea salad!

Salad Ingredients:

  1. Canned Chickpeas 540 ml or 2 Cups Drained
  2. Cucumber 160 grams
  3. Tomato 160 grams
  4. Fresh Parsley Leaves 5 grams or 2 Tablespoons
  5. Green Onion 15 grams or 2 Tablespoons

Salad Dressing:

  1. Extra Virgin Olive Oil 6 Tablespoons
  2. Balsamic Vinegar 1 Tablespoon
  3. Sea Salt 1/2 Teaspoon
  4. Black Pepper 1/4 Teaspoon
  5. Dried Oregano 1/4 Teaspoon

Instructions

Tools You Will Need:

  • Cutting board
  • Paring Knife
  • Can Opener
  • Colander
  • Large Bowl
  • Large Spoon
  • Measuring Spoons (1/4 teaspoon, 1/2 teaspoon, tablespoon)

Instructions:

  1. First gather all your ingredients and tools.
  2. Next open the can of chickpeas, drain, rinse and add to a large bowl.
  3. Next wash the cucumber and cut off the ends. Then chop the cucumber and add to the bowl.
  4. Now wash and cut the tomato and add to the bowl.
  5. Then cut the green onion and add to the bowl.
  6. Finally rough chop parsley leaves and add to the salad.
  7. Now for a simple Italian dressing, first drizzle with extra virgin olive oil.
  8. Then add balsamic vinegar.
  9. For the seasoning add sea salt, black pepper and dried oregano.
  10. Mix, serve & enjoy! Buon Appetito!
