Easy Roasted Tomatoes

Mini roasted heirloom tomatoes is an easy and delicious recipe.

Roasting tomatoes brings out the natural sweetness and makes them taste like little candies (almost!). And when you add the basil, well this is the perfect pairing. The basil helps to bring out the sweetness of the tomatoes even more. While the oregano and salt help to contrast the sweetness of the tomatoes.

The best part of this recipe is that it doesn’t require a lot of steps. Once you prep and put the tomatoes in the oven, you just set the timer and wait. Easy! Cooking time is not too long because the tomatoes are small.

Tools You Will Need:

Paring Knife,

Cutting Board,

Baking Tray (13 inch x 18 inch),

Parchment Paper,

Measuring Spoons (Tablespoon, Teaspoon, 1/4 Teaspoon, 1/8 Teaspoon),

Measuring Cup (or Kitchen Scale), and

Plate.

Ingredients

  1. 250 grams Grape/Cherry Tomatoes,
  2. 1 Teaspoon Extra virgin olive oil,
  3. 1/8 Teaspoon Sea Salt,
  4. 1/8 Teaspoon Dried Oregano, and
  5. 1 Tablespoon Fresh Basil.

Instructions

Set oven to 350 degrees.

Then Line a 13 inch x 18 inch baking tray with parchment paper.

While the oven is preheating, wash the tomatoes. Cut them in half on the cutting board and place them on the parchment lined tray.

Drizzle the tomatoes with olive oil and then sprinkle them with salt and oregano. Place tomatoes cut side up.

Place in the preheated oven on the middle rack.At 30 minutes take the tray out of the oven and turn the tomatoes over. At this point the bottom of the tomatoes should have caramelized and be ready to turn over. If this has not happened yet, put them back in for a couple of more minutes before turning over.

Place the tray back in the oven for another 10 minutes. At about 40 minutes remove the tomatoes from the oven.
