This egg muffin recipe is so simple and tasty! They make a great make ahead breakfast and they only have 7 ingredients.

Tools You Will Need:

Kitchen Scale,

1/4 Teaspoon,

Cheese grater,

Paring Knife,

Cutting Board,

Medium Sized Bowl,

Muffin Liners or parchment cups, and

Muffin Tin for Large Size Muffins.

  1. If you plan to make oven roasted tomatoes for this recipe, then this would be the first step. The recipe for these can be found here. Otherwise you can substitute with raw or sun dried tomatoes or another vegetable of your preference.
  2. Set the oven to preheat to 350 Degrees Fahrenheit.
  3. Now gather all the ingredients and all the tools you will need to make this recipe.
  4. Then line a large muffin tin with four large muffin liners or large parchment cups.
  5. Next measure out 30 grams of sausage meat and flatten into mini patties and place in each of the four muffin cups.
  6. Place in the preheated oven for 10 minutes.
  7. While the sausage meat is cooking, prepare the egg mixture.
  8. In a medium sized bowl, crack 4 large eggs.
  9. Then using a cutting board chop 20 grams (about 1 Tablespoon) of green onions.
  10. Afterwards, grate 40 grams of pizza mozzarella.
  11. Weigh out 60 grams of oven roasted tomatoes cherry/grape tomatoes. If you do not have oven roasted tomatoes, you can use raw tomatoes or even sun dried tomatoes. Just cut them into small pieces. Alternatively, you can use diced bell pepper.
  12. Once you have all your ingredients ready, add them to the bowl of eggs.
  13. Finally, add in the salt and pepper and whisk until combined.
  14. By this point, the sausage meat should be ready to remove from the oven. Let cool for a couple of minutes.
  15. Then evenly divide the mixture between the 4 muffin cups (approximately 1/3 cup per muffin cup).
  16. Place back in the oven to bake for 20 to 25 minutes at 350 Degrees Fahrenheit.
