60 Grams Roasted Heirloom Tomatoes (See Recipe)

To make these sausage breakfast muffins you will need a total of 7 ingredients. First you will need sausage meat. This recipe uses Italian seasoned sausage meat, but you can substitute with whatever flavor you prefer. Sausage meat can be purchased without the casing or you can simply remove from the casing.
Next you will need 4 large eggs. This recipe will result in 4 large sausage egg muffins.
Then you will need chopped green onions. If you do not have green onions handy, you can always substitute with another type of onion such as yellow cooking onion, red onion, shallots or for an even milder flavor chives.
Next you will need some oven roasted small tomatoes. If you do not have any, you can substitute with raw tomatoes (just make sure they are cut small) or sun dried tomatoes.
Finally, this recipe uses grated pizza mozzarella as the cheese component. If you don’t have pizza mozzarella, you can substitute with another type of soft cheese. For example, a provolone, Manchego or even a cheddar.
Lastly, this recipe uses sea salt and finely ground black pepper as the seasonings.

Set the oven to preheat to 350 Degrees Fahrenheit.
Now gather all the ingredients and all the tools you will need to make this recipe.
Then line a large muffin tin with four large muffin liners or large parchment cups.
Next measure out 30 grams of sausage meat and flatten into mini patties and place in each of the four muffin cups.
Place in the preheated oven for 10 minutes.
While the sausage meat is cooking, prepare the egg mixture.
In a medium sized bowl, crack 4 large eggs.
Then using a cutting board chop 20 grams (about 1 Tablespoon) of green onions.
Afterwards, grate 40 grams of pizza mozzarella.
