  2. 70 Grams Asparagus after removing ends
  3. 79 Grams Red Onion
  4. 3/4 Teaspoon Fine Ground Sea Salt
  5. 1/4 Teaspoon Black Pepper
  6. 3 Tablespoons Extra Virgin Olive Oil

How to Make This Recipe

  1. Let’s start with gathering the ingredients and tools we need to make this recipe.
  2. Next let’s start by washing the asparagus. Make sure to wash it well because it can be gritty.
  3. Now let’s remove the ends of the asparagus as they have a tendency to be tough. They should easily snap off at the tough part. Then let’s cut the asparagus into about the same size pieces so that they cook at the same time. Once finished cutting let’s transfer to a large plate.
  4. Next let’s cut the onion into about the same size pieces and add them to the same plate as the asparagus.
  5. Then let’s get the frying pan and let’s add 2 Tablespoons of the extra virgin olive oil to the pan. Let’s add the asparagus to the pan, season it with 1/8 of the sea salt and set the temperature to low. Occasionally stir the asparagus.
  6. Once the asparagus has cooked for about 5 minutes, let’s add one tablespoon of extra virgin olive oil and then the onions to the pan. Season the onions with about 1/8 teaspoon of the sea salt. Continue to cook on low. Occasionally stir the mixture.
  7. While the onions are cooking in the pan, let’s get the egg mixture ready. In the medium sized bowl, crack 4 large eggs. Then add 1/2 teaspoon of the sea salt and 1/4 teaspoon of the black pepper.
  8. After cooking the onions for about 5 minutes, add in the egg mixture. Cover the frying pan with a lid and continue to cook on low heat.
  9. Once the top of the frittata has set (this took about 8 minutes in this recipe), flip over using a large plate. Be careful when doing this because the frittata is hot!
  10. Once you have placed the frittata back in the pan cover with the lid again and let it finish cooking. In this recipe, it took about 2 minutes.
