Ingredients to Make This Pasta with Burrata

  1. 1.5 Liters of Water
  2. 1 1/2 Tablespoons of Coarse Sea Salt
  3. 120 grams Rotini
  4. 2 Tablespoons Extra Virgin Olive Oil
  5. 1 Clove Garlic (5 grams)
  6. 1 Tablespoon Fresh Basil
  7. 257 grams mixed grape and cherry tomatoes
  8. 1/4 Teaspoon Fine Sea Salt
  9. 1/8 Teaspoon Dried Oregano
  10. 250 grams Burrata Cheese

How To Make This Recipe

  1. Gather all the ingredients and tools needed for the recipe.
  2. Peel the garlic clove and set aside for later in the recipe.
  3. Wash and cut the tomatoes in half and place in a bowl. Set aside for later.
  4. Fill up the pot with water. Place on the stove at maximum heat level and cover with a lid.
  5. While the water is heating up, start making the sauce. Place the extra virgin olive oil in the frying pan and add the tomatoes and seasonings (sea salt and dried oregano). Cover with a lid and set to medium heat. Stir occasionally.
  6. After sauce has cooked for about 5 minutes turn down the heat to minimum. Add the garlic. In this recipe we used crushed garlic, but you can also leave the garlic whole and remove it if you prefer a more mild flavor. At this point, you may also want to add some pasta water to thin out the sauce.
  7. Once the water boils, add the coarse sea salt, cover with lid and bring back to a boil.
  8. Once the water has boiled, add the pasta. In this recipe we used rotini and the suggested al dente cook time is 8 minutes. So we cooked it 7 minutes in the pot and then we will transfer to the pan to finish cooking in the pan with the sauce.
  9. Add the fresh basil to the sauce at the end (just before adding the pasta to the sauce.)
  10. Once the pasta is ready, drain it either using a slotted spoon or colander and transfer it to the pan with the sauce. Let it cook for another minute.
  11. Then transfer to a serving bowl.
  12. Drain the burrata cheese from its liquid and place it on top of the pasta.
  13. Cut into the burrata. Then mix the pasta and burrata together. Serve and enjoy! Buon appetito.
