Cucumber salad reminds of me summer. It reminds me of a time when something so simple as chopped up cucumbers, tomatoes and onions could taste so delicious. This was something that my mother would make as a part of a dinner and she made them with garden fresh ingredients. If you let the salad sit for a few minutes, it gives a chance for the flavors to marinate and the flavors of the tomato, cucumber and onion will absorb into the vinaigrette. And my favorite part of this salad was dipping bread in the juice of the salad that was left at the bottom of the bowl! Happy and delicious times!

This is such an easy salad to make because you only need 4 ingredients.
- Cucumber
You can use any type of cucumber you like. This recipe was made with small cucumbers since they are usually more tender. But you can easily use larger cucumbers (sometimes called English cucumbers) or field cucumbers.
- Tomatoes
This recipe uses San Marzano type tomatoes, but you can use other tomatoes you might have on hand like Roma, or a larger variety like Beefsteak tomato.
- Green Onion
This recipe uses green onion, however, you can substitute with another type of onion, such as a red onion.
- Fresh Parsley
Finally, the last ingredient is fresh Italian parsley.

- Extra Virgin Olive Oil
- Red Wine Vinegar
- Sea Salt
- Fine Ground Black Pepper
- Dried Oregano
All of these ingredients were staple ingredients we always had on hand. All you have to do is pour the Extra Virgin Olive Oil and Red Wine Vinegar over the Salad and then season with the sea salt, pepper and oregano and mix.

- Now start by cutting the ends of the cucumber. Then cut the cucumber in half lengthwise and chop each half in small pieces. Once all the cucumber is cut, add to the large bowl.
- Next take the green onion and chop into small pieces and add to the bowl.
- Then cut the tomatoes in half and then in half again and chop into small pieces and add to the bowl.
- Finally, roughly chop the parsley and add to the bowl.
