This is a family favorite that we make often. We created this salad recipe with our favorite ingredients: olives, artichokes, tomatoes, green onions and parsley. It’s easy to make because we usually have the ingredients.

What You Need For This Recipe

Ingredients

First you will need these 5 ingredients to make the main part of the salad:

  1. Canned Artichoke Hearts,
  2. Pitted Black Olives,
  3. Grape and/or Cherry Tomatoes,
  4. Chopped Green Onion, and
  5. Fresh Parsley Leaves.

Artichoke Salad Recipe

Then for the vinaigrette dressing you will need the following ingredients:

  1. Extra Virgin Olive Oil,
  2. Balsamic Vinegar,
  3. Sea Salt,
  4. Ground Black Pepper, and
  5. Dried Oregano.

How To Make This Recipe

Tools You Will Need:

  1. Cutting Board,
  2. Paring Knife,
  3. Measuring Spoons (Tablespoon, teaspoon, 1/8 teaspoon),
  4. Measuring Cup (1/2 cup, one cup),
  5. Small and Large Spoon,
  6. Small bowl, and
  7. Medium Sized Serving Bowl.

Instructions for the Main Salad portion:

  1. First, wash the tomatoes and, then, cut in half on the cutting board. Next, place them in the medium-sized bowl.
  2. Once you have prepped the tomatoes, open and drain a can of pitted black olives. Add them to the bowl of tomatoes. (Refrigerate the rest of the olives for later use.)
  3. Next, open and drain a can of artichoke hearts. Cut them into quarters and add them to the bowl. Note that the artichokes used in this recipe are not marinated.
  4. Then wash a green onion and using the cutting board chop into 1/2 cm pieces. Cut and discard the bottom portion of the green onion. After you have cut the green onion, measure out 1 Tablespoon (or 6 grams) and add to the medium-sized bowl.
  5. Finely chop the parsley leaves and sprinkle over salad.

Instructions for the Salad Dressing:

  1. First measure out each of the following and add to a small bowl:
    • Extra virgin olive oil,
    • Balsamic vinegar,
    • Sea Salt,
    • Fine Ground black pepper, and
    • Dried Oregano.
  2. Next mix the ingredients using a small spoon and then drizzle over the salad.
  3. Mix the salad, serve and enjoy!

Different Ways to Enjoy This Artichoke Salad Recipe

This salad can certainly be eaten as is, as an appetizer or you can build on the base salad with the following:

  1. Add some protein and make:
    • a chicken artichoke salad
    • a tuna artichoke salad, or
    • keep it vegetarian and add some canned chickpeas and make a chickpea and artichoke salad
  2. Have it as a side dish for an easy dinner with a piece of salmon.

1. If I don’t have dried oregano, what can I substitute?

You could try substituting with dried thyme.

2. Do I have to use grape or cherry tomatoes?

No, you can use any type of tomato.

3. Can I substitute the balsamic vinegar for another type of vinegar?

Yes, of course, use your preferred vinegar. One suggestion would be to use a red wine vinegar.

  • 300 grams Canned Artichoke Hearts (398 ml can)
  • 45 grams PItted Black Olives (1/2 Cup)
  • 120 grams Whole Grape Tomatoes (1 Cup)
  • 6 grams Green Onion (1 Tablespoon)
  • 3 grams Fresh Chopped Parsley Leave (1 Tablespoon)

Salad Dressing

  • 2 tablespoons Extra Virgin Olive Oil
  • 2 teaspoons Balsamic Vinegar
  • 1/8 teaspoon Sea Salt
  • 1/8 teaspoon Ground Black Pepper
  • 1/8 teaspoon Dried Oregano

Main Salad

  1. Wash and cut tomatoes in half using the cutting board. Place them in the medium-sized bowl.

 

  1. Open and drain the can of pitted black olives. Add 45 grams (or 1/2 cup) to the salad bowl.

 

  1. Open and drain a can of artichoke hearts. Cut into quarters and add them to the salad bowl.
    • Note that the artichokes used in this recipe are not marinated.

 

  1. Wash the green onion and using the cutting board, cut into approximate 1/2 cm pieces and add to the salad bowl.

 

  1. Finely chop the parsley leaves and sprinkle over the salad.

 

Salad Dressing

  1. In a small bowl, mix the olive oil, balsamic vinegar, salt, black pepper and oregano. Drizzle dressing over the salad.

 

  1. Mix salad, serve and enjoy!
