This recipe only requires 4 ingredients. The first and main ingredient is Sugar Pumpkin. Next you will need sea salt and oregano for seasoning. Finally, you will need some extra virgin olive oil to coat the pumpkin pieces.

How to Make Oven Baked Pumpkin

First preheat your oven to 400 degrees.

Next line a baking tray with parchment paper. This will make for easier clean up later on!

Then you will need to take the skin off the pumpkin using a knife and a cutting board. Once you have taken the skin off, cut the top off the pumpkin and remove the inside or pulp. It may be helpful to use a spoon to do this. In the meantime, you may want to set the pulp aside for later as you can also cook the pumpkin seeds. They make a tasty snack! Next, you will want to cut the pumpkin into small pieces,, about 1 inch in size. Place the pumpkin pieces on the baking tray and drizzle with extra virgin olive oil. Then season with sea salt and oregano. Place on the bottom rack of the preheated oven. Check after about 35 minutes, if the bottom of the pumpkin pieces have browned, then turn them over and place back in the oven for another 10 minutes. They should be ready after about 45 minutes.

To prepare this recipe, you will need the following tools and supplies:

Ingredients

  • 750 grams Sugar Pumpkin (peeld and cut into 1 inch pieces)
  • teaspoon Sea Salt
  • teaspoon Dried Oregano
  • tablespoon Extra Virgin Olive Oil

Instructions

1.  Preheat oven to 400 degrees and line a 12 inch x 17 inch baking tray with parchment paper.

2. Using a knife and cutting board, remove the skin from the pumpkin.

3. Next cut the top off the pumpkin and remove the pulp. (You may want to set aside for later. The seeds can be separated from the pulp and they can be roasted. See recipe above for details.)

4. Next cut the pumpkin into approximately 1.5 to 2 inch pieces.

5. Place the cut pieces onto the parchment lined tray. Drizzle with the olive oil and sprinkle the salt and oregano. Toss together and then lay flat on the tray.

6. Place in the preheated oven on the bottom rack. Check at about 35 minutes. The bottom of the pieces should be browned. If they are, turn the pieces over and put back into the oven on the bottom rack for another 10 minutes.

If the pieces are not browned, place the tray back in the oven for a few more minutes and check on the pumpkin to see once it has browned, then turn over.
